What Vitamin C Does — Beyond Colds

Collagen synthesis: Vitamin C is an essential cofactor for enzymes that produce collagen — the structural protein in skin, joints, blood vessels, and connective tissue. Without it, collagen production halts (scurvy). Iron absorption: Vitamin C enhances non-heme (plant) iron absorption by 2–4× when eaten together. Antioxidant: scavenges free radicals, regenerates vitamin E. Immune modulation: supports neutrophil and lymphocyte function.

How Much Do You Need

RDA: Adult men 90 mg/day, women 75 mg/day. Smokers need 35 mg extra/day (smoking creates excessive oxidative stress). Tolerable Upper Limit: 2000 mg/day. Above 200 mg, absorption efficiency drops significantly (saturation). Clinical doses of 500–1000 mg/day for specific conditions.

Best Food Sources

Red bell pepper (1 cup raw = 190 mg — more than double the RDA). Kiwi (93 mg each). Strawberries (58 mg/100g). Broccoli (89 mg/100g). Brussels sprouts (62 mg/100g cooked). Orange (53 mg each). Vitamin C is heat-sensitive: eat vegetables raw or lightly steamed.

Does Vitamin C Prevent Colds?

Meta-analyses show: regular supplementation reduces cold duration by 8–14% and severity. It does NOT prevent colds in the general population. However, for people under extreme physical stress (marathon runners, soldiers in sub-arctic conditions), it reduces incidence. Taking vitamin C at cold onset does not help much.

Forms and Bioavailability

Ascorbic acid is fully bioavailable. Buffered forms (sodium ascorbate, calcium ascorbate) are gentler on the stomach and equally effective. Liposomal vitamin C claims higher bioavailability but evidence is mixed. Ester-C is slower release but not proven superior.

If you're taking collagen peptides, vitamin C is essential for the synthesis to work. Take both together. Vitamin C is the rate-limiting factor for collagen production — without adequate C, supplemental collagen cannot be effectively utilized.
